Avocado Kale Salad

Nothing better than healthy fats and plenty of greens to jump start your journey to health and fitness! This low carb high fat recipe is simple and quick and hits all the right spots with two of my favourite foods: Avocado and kale! 

Did you know that avocados are actually single-seeded berries? They are low in carbs but high in fat. Monounsaturated fat to be exact: A nutrient that helps reduce the risk of heart disease and quiets hunger.

These are the ingredients:

For the salad:

1 bunch kale, chopped
1 avocado, chopped
1/2 small red onion, sliced
1/2 cucumber, scliced
1/2 red bell pepper, sliced
1 cup raspberries
coriander, chopped

For the dressing:

juice of one lime
1 avocado
1 tbsp mustard
salt and pepper

This is how you prepare it:

  1. In a large bowl, mix all the ingredients for the salad.
  2. Give ingredients for the dressing into a blender or food processor and blend until creamy. Add a little water if desired. Spice with salt and pepper to taste.
  3. Serve the salad topped with the dressing, and if you like, add nuts and seeds as topping. Enjoy your salad!
