Raw Vegan Zoodle Recipe

It’s always great to have a delicious alternative to high-carb dishes such as pasta. Wether you just want to try something new or are on a low-carb diet, vegetable noodles might be just your thing!

Zucchini pasta, the so called “zoodles”, not only provides for a great tasting alternative, but is super easy to make! Learn the basics and then try out each and every one of the following light and simple pasta ideas.

Zoodles In Raw Vegan Marinara Sauce

Ingredients:

2 spiralized zucchinis
2 tomatoes, quartered
1/2 red bell pepper, cut in stripes
2 garlic gloves
1 small onion, quartered
1 hand full basil or parsley
2 tbsp olive oil or other
1 tbsp dried chilli
salt and pepper

Preparation:

  1. Throw all ingredients besides zucchini in a food processor and blend until you have a creamy sauce. Add pepper and salt to taste.
  2. Give Zoodles in a bowl, cover with the sauce and you are ready to serve!

Tip: Instead of parmesan cheese, make your own vegan version from almonds or add PURYA!´s crunchy Super Sprouts Flaxseed!
